Things are starting to get back to normal after all of the holiday craziness. I have decided to start planning one meatless dinner a week. My goal is to save us money since meat is getting pretty pricey and also to help improve our health. My husband and I both want to improve our health this year.
I’ve been checking out some recipes from Cooking Light also. There are some that sound really good that I would like to try out. We don’t have everything I need to make them on hand though so they will probably appear in next week’s menu plan. We need to start getting more veggies into our meals and these recipes sound like a yummy way to do that. We’ll see.
Here is our meal plan for this week:
- Sunday: Burgers
- Monday: Pizza
- Tuesday: Tuna Melts
- Wednesday: Grilled cheese and soup (meatless night)
- Thursday: Chicken quesadillas
- Friday: Possibly having dinner at mom’s. If not, I’ll have to come up with something
- Saturday: Pork chops and mashed potatoes
