Menu Plan and Eating From the Pantry Update

This week is my second full week of January’s Eating From The Pantry Challenge. This week I did go to the Trader Joes and Costco. We didn’t get a whole lot food wise at Costco, but I did spend $25 on 50 pounds of sugar. I haven’t added up the food portion of my Costco bill yet, but we’re definitely close to my goal spending for the Eating From the Pantry Challenge. Now I have to see if we can make it the rest of the month without buying any food. Well, I’m sure we’ll need milk and some produce, but nothing else food related needs to come into this house.

Last week we had a bit of a setback to the challenge too. When I came home from work one night the heat wasn’t working and it was only 62 in the house. That’s way too chilly when you have a toddler. After running around resetting the thermostat and the furnace I finally got the heat to come back on, but it takes awhile for our house to heat back up. Since I didn’t really want my daughter in the house until it warmed up we wound up going out to dinner. It was completely unplanned and definitely over our budget, but what can you do? We did have the money from not grocery shopping so that is fine and thankfully I didn’t have to pay for an emergency service call. Let’s hope the furnace doesn’t do that again any time soon.

Today I wound up staying home with my daughter because she was sick. While she was taking her nap this morning I was able toget some baking done. I was glad to have that opportunity because I didn’t get any baking done over the weekend and I missed it. And, as soon as she woke up from her nap she walked into the kitchen, saw some muffins on the cooling rack and took one for herself. Since it was a whole grain apple muffin I figured it wasn’t worth a fight and let her have it.

My brother also picked me up some lavender this weekend. I’ve been looking for it for well over a year now so I was excited when he told me he had found some. McCormick actually makes it and it’s currently available in the grocery store near his house. (It wasn’t previously) He plans to make some lavender brownies with his. I’m still debating what to make with mine, but I was thinking that lavender chocolate chip cookies would be good. Does anyone have any thoughts on what to use it for?

Anyway, here is our menu plan for the week.

Dinners:

  • Monday: Spaghetti and Italian Sausage with Corn Bread
  • Tuesday: Chicken Quesadillas
  • Wednesday: Broccoli Cheddar Soup and Grilled Cheese
  • Thursday: Leftovers
  • Friday: Pizza-dillas
  • Saturday: Chicken Fried Rice (didn’t get to this last week)
  • Sunday: Fettuccine Alfredo with Bacon (Jan/Feb 2010 Cooking Light), didn’t get to this last week

Breakfasts:

  • Apple Multi Grain Muffins
  • Cereal
  • Saturday: French Toast
  • Sunday: Carrot Cake Pancakes (from Jan/Feb 2010 Cooking Light), didn’t get to this last week

Lunches:

  • Sandwiches
  • Leftovers
  • Saturday: Baked Potatoes
